It isn't cycling/tri related but you mentioned sports biographies. If you like hockey, I'd give "Playing With Fire" a read. It's the biography of Theo Fleury and it's well, well worth the read. Both his and John Daly's books were eye-opening in terms of how open they were about some very dark chapters in their lives.

Running with the buffalous is my favorite running book of all time hands down
26 marathons
Endure by Alex Hutchinson. More on the nerd side of things but gives a lot of anecdotes
The science of running. Again more of a nerd book by steve magness.
If you like the science behind training and learning about that then the above 2 are perfect for that
Once a runner. Fiction, but reads like a memoir and is mostly realistic

Born to Run by Christopher McDougall. Fascinating. About ultra running, Caballo Blanco, the native tribes of Northern Mexico. Oh man I love this book.

I found the Gaimon books as OK. I read them as layover/airplane fodder while on work trips. Don't buy the "ask a pro" book. I didn't really find it that funny or interesting, didn't even finish it.
I 2nd the choice of Gironimo, good choice.
I thought Secret Race by Hamilton was OK. Another doping tell all but I didn't want to read anything from that other guy, so that was the choice.
I liked Obree's "Flying Scotsman" enough I mailed my copy out for an autograph. Not everyone reads it, but I liked it. I like the personal feel to it and the pictures thrown in. Watch the "Endura" wind tunnel video of him and you'll get an idea.

Surprised more people haven't read this.... Running for my Life. Incredibly inspiring.

Finding Ultra by Rich Roll changed my life.
Same goes for Born to Run.
A Life Without Limits is good too.
No Shortcuts to the Top by Ed Viesturs. A great read and relatable to endurance sports and life in general. I couldn't put it down.

The correct answer for "best endurance book ever" is hands down Boys in the Boat, as a few others have correctly mentioned.
Also a great book, Assault on Lake Casitas. God damn do I love that book. I would read it every year before our Spring Training trip to get ready for the trip and to make the most of it.

Bowerman and the Men of Oregon.
It is pretty in depth about his life and then the advent of Nike etc.

Project Rainbow - Rod Ellingworth
I loved this one! It’s kind of a cool history of how British Cycling got where it is now. There’s also some insight into the process and detail driven management that produced Team Sky, and likely influenced how endurance sports across other disciplines operate as well.

He told a funny story that when he got to a part where he was quoting his wife - the first part in the book where a woman was speaking, I think - he asked her "Do you want to read this part? Or do I imitate your voice, like a falsetto? Or just read it as me?"
I don't remember how it turned out, and I haven't listened to either audiobook
Truth is, the only audiobook that I've ever listened to was Coraline, narrated by author Neil Gaiman

180 degrees from the "sporting" side of cycling, but still a good read:

Gotta agree "Boys in the boat" is my favorite, close second Unbroken. On the fiction side once a runner is also good.

+1 to Shoe Dog and Endure
Hadn't seen How Bad Do You Want It mentioned yet. That's a good one too.
Phil Gaimon's books (Pro Cycling on $10 a Day and Draft Animals) are great
And it isn't directly endurance sport related, but I always recommend Open by Andre Agassi
