I have a power profile from bestbikesplit.com for a race that I'm going to be doing and it's suggesting different power outputs during different sections of the race depending mostly on the grade of the road. Don't overthink it. Just focus on power targets. Let your body self-select which gear is most comfortable at any given moment. We, humans, are often not that great at estimating our instantaneous power output. But we're pretty good at figuring out which gear feels best at any given moment. And the one that feels best probably is the best.
