I have an XTR Di2 rear derailleur. On my F-Si 32 x 11-42 isn't too bad though sometimes I'm left with the choice of either spinning at 110rpm or grinding at 70rpm to hit my desired speed. Maybe I should just plan on traveling with multiple cassettes? 11-32, 11-36, and 11-40?

you don't mention the type of terrain you plan on traversing or what type of bike this is going on. assuming road bike and mild terrain, 52 x 11/36 should probably see you through most things. 52 x 11/40 even more stuff. 50 x 11/40 most stuff, probably. also depends on your strength and your riding characteristics. you've been on ST long enough to know all these things...!

So on any flatish course that you would have run a mid-compact 2x11 with 11-25 cassette, use the 11-36 cassette with your 52T chainring.
The 11-40 cassette with a 52T single chainring gives you essentially the same bottom climbing gear as a mid-compact with an 11-28 cassette.
Having a choice of cassettes to suit various course conditions is smart, whether you're running 1x or 2x.
I've done the math on various cassettes you might use in a 1x road configuration. Even with an 11-40 cassette, you should never have more than a 16% difference in cadence between any two adjacent cogs at the same speed.
