I don't think that extra stress of outdoor rides is too relevant for AT. As far as I experienced it, every workout just gives you + or - points for your progression level (each energy system separately).
AT does not evaluate your overall stress level and calculates a plan from there. It just gives you workouts at your progression level (VO2max on VO2max day). If you can't get through due to your high overall stress, it will just make your future (i.e. VO2max) workouts easier. It will not change a VO2max day into a Z2 day.
That means, the underlying structure of your chosen plan will always stay the same. Only the workout levels will adapt, based on your feedback.
If you add a ton of Z2 work, this will only increase your z2 progression level but will not influence your chosen plan in any way.
If you add a ton of z2 work during the cool down of other workouts, it won't have any effect on the plan or your progression levels.
