I did notice that. I've been trying to find pictures on the front end to see how the tilt works on that bike. Haven't found much that clearly depicts it.....

Good catch. If I had to guess he has been experimenting with the high hand position he tried last year. Notice that the pads are also about an inch or two farther forward. This allows him to have his hands higher and still get around that maximum pad to bar tip height,... I think

It looks like Canyon has made him a custom tilt spacer. You can buy a 9 degree one from Canyon.

You can see it in this picture were it goes on top of the stack of spacers and moves the extensions and arm pads inwards:

It looks like he's got custom angled adapters on top of whole stack. The ones that Lange has (I've got them too, but didn't try yet) are different.

I couldn't sleep last night so I fiddled a bit with my Shiv which has level arm rests and positions my forearms roughly level. I cut up an old mousepad to create some neoprene "shims" for the front of my arm rests to recreate an angle. Surprise! It was really comfy and felt really secure! Worth trying IMO.
