So is there really a limit with how creative you can get in choosing your wheel combo?
The ALP+808 rear, renn disc, or make the hed3 are all somewhat affordable combos, and I'm wondering what I'd need to consider when mixing and matching.

Flat repair is a small consideration - different rim depths require different stem lengths or valve extensions - plus the disc/Hed 3 - crack pipe thing. I have a set of 909's. The disc requires a normal length valve - the 404 front requires a valve extension. The disc requires a crack pipe. So if I flat the front - I need to remove the valve extender from the flatted tube (so I need the little wrench) and put it on the new tube....not a big deal but you need to have some extra stuff. Also a deeper rim requires the use of a tube with a removable core or a longer stem (so if you want to borrow a tube - it may not work...). All sorts of little things.....
Mixing Hed and Zipp is weird....
