Love my R5 but am sick and tired of dealing with the Hydraulic Cables running through the stem making both travel and stem changes a challenge. Any ideas / options on ways to work around this?

It's not terribly difficult. Use a Cervelo ST36 stem or similar, and modify the HS spacers to accept the hoses coming in from along the bottom of the stem, or use an FSA SMR ACR stem and this spacer, which should - IIRC - allow for routing either in or below the stem.
