GRX 810 - 2x 50t chainring?
I have a 48/31 on my GRX 810 cranks.
I would love to bring it up to 50/34 since I use it on pretty tame gravel and road.

Are there any chainrings that will work? Or am I better of switching out the crankset to go with Shimano 105?

I'm pretty sure you won't find 50/34 that will work with GRX bolt pattern.

FWIW, I've ridden 48/31 on my bike for 2 years now for both road and gravel, and I live in a flat area, and I have zero issues.
I also travel to Maui and California infrequently and love the granny gear for the steeps.
Only in a strong tailwind or fast roadie ride do I run out of gears.
My FTP is about 3.4 W/kg, so I'm not slow, but I'm not crushing dreams either.

Following b/c I'm also interested in this question.

One additional question I have is about the GRX-105 swap. B/c of the different Q-factor between GRX and other Shimano cranks (to accommodate wider tires), I think the GRX crank requires the GRX FD. Is the reverse true? i.e., if you replace a GRX crank with a 105 one, can you just adjust the limit screws on the GRX FD and be ok?

I would not do that.
FD shifting is finicky as it is unless you use di2.

I do run out of gears quite often.
I live in a rolling/hilly area and any steady grade down and I seem to spin out.
Not the end of the world, but would be nice to have some more range
