I've been way into African & Caribbean food for a few years now. This is a good West African stew, a bit of food prep required, but then you mostly throw the ingredients in a crock pot. I'm sure it's great as written, but I browned about 1 1/2 pounds of lamb stew meat cut into cubes and put that in as well. Maybe it was because of adding the lamb, but it took 3 hours on high to get cooked through instead of 3 - 4 1/2 hours on low. Makes a really thick, hearty stew, especially good right now in this shit weather.
