My plan is exactly this. 3 kids as well.

I do Masters Swim Monday, Wednesday and my own thing on Fridays each a minimum of 3000 yards. Trainerroad is my bike on Tuesday and Thursday and I follow trainerroad for the run recommendations about 90% of the time on Wednesday and Friday. Saturday I do my own long ride 2-4 hours and Sunday I do my own long run 10-14 miles with a rare 16 miler if I feel great. If I miss a day or even two a week I don't let it bother me. Never seems to cause any issues. If anything my next workouts are stronger.
