help me strategize my HIM

i would like some advice on bike pacing for my HIM. i've been slowly getting faster over the past 3 years and i think i might have a 2:45 bike split in me but not sure what that would do to the 21k afterwards. my fastest 21k was either 2:10 or 2:20, not sure. i'd say i'm likely about that speed now but some day I'd sure like to get faster. swim is WAY up in teh air and may be around as slow as 40 minutes. so I'd like to break 6 hours and while i did that last year (same course) the swim was likely short that year. so this year i'm thinking bike is where i need to work it.

since we only have 1 road around here my bike rides are like trainer rides (except the heat and wind play havok with times, etc.). I have not a powermeter. i use a HRM. i'm generally around 1:06 to 1:10 for 38K, around 1:40 to 1:45 for 59K (both 38K and 59K have 1 hour of sweet spot - around 130 HR - for me that is around 85% of LT) and don't do the 90k ride enough to have a range but anything in the 2:55 area is pretty doable and I'd have to check my logs but I think I've gone 2:50 also but not sure.

so i'm thinking to keep the HR around 125-130 on the bike and hang on for the run?
