That is suprising I would have guessed 56cm for someone 6ft tall

As noted nearly everywhere, they run big because they have long top tubes.

The 2 bikes that Cervelo had at interbike for Dave Z and Fabian I belive were 56cm on was Dave's TDF record bike and the other was Fabian's WC bike.

Yes, it was a 54 for Cancellara. Also the other points that I observed on his bike:
  1. Stock P3C, 54 cm, 700's
  2. Front wheel Zipp 808 rear wheel Zipp Disk
  3. Vittoria Corsa EVOs (no lame Tufos...)
  4. Relatively a "heavy set up" which we measured at 19 lbs with:
  5. Visiontech Aluminium bars
  6. Aluminium FSA 175 cranks with 54/44
  7. Cut off nose saddle Selle Italia Trans Am with Mag Rails
  8. A huge drop from nose of saddle to top of pads...looked like 20 cm or so
  9. seat mounted forward on front hole as far forward as he could mount it
