It is better to train the same overall volume with greater frequency of sessions tthan the same volume with lower frequency of sessions , including because of better recovery and more repeated exposure to ingraining good form

Practicality and scheduling troubles aside is this statement true?

Starting to see cyclists talk a bit more about doubles rather than a single 3/4 hour ride

I think the answer is a mix of both and depends on goals. If you are marathon training you need those 20 milers not 2 x 10 mi. Need to think about practicing nutrition and stuff too.

Possibly the one that allows to put together more hours. If the total hours are equal, then I would say, fewer longer sessions for long races and more shorter ones for the short stuff
