say I did a 50 minute tempo run, does that necessitate an "easy" day or could I do intervals the following day on the track w/o doing some damage?

Not necessarily. Intervals on a track should be fine. Lots of running like this will definitely make you faster, but the running part of Tri is also by far the easiest way to get injured (except for bike crashes or shark attacks)
