"Training" wheels and gearing

If I try to run a set of "good" wheels with an 11-26 gearing, and a set of "training" wheels for some rougher riding with a 12-27 gearing, will my shifting be affected by the different gearing on the rear cassette, or will the derailleur be able to handle the difference?

if the number of gears is the same (9 or 10), the rear derrailleur will be able to handle it with no problem.

here, the chain could be the only problem but one teeth (26 to 27) shouldn't be a big deal.
