I know we have both gone through some similar things this last bit...I ate a lot like that too at first! Also lots of 'finger foods' - edemame, popcorn, brie, crackers, wine!

Hang in - it sucks less each day!

thought I'd revive this thread again!!!


I came up with a great recipe last night for chicken salad.
1lb cooked chopped skinless boneless chicken breast
~1c dried cherries
~3/4c slivered almonds
~1-1.5c Trader Joe's 0% greek yogurt (depending on how "saucy" you like it)
1-2 tsp Trader Joe's sweet hot mustard
ground black pepper to taste

SO GOOD. I love cherry almond chicken salad but don't like mayo really, and was looking for a healthier substitute.
It even passed the hubby taste test!!! (that was the best part, he's super picky!)

I've been in the process of moving for over a week, slowly packing up the house and got moved into the new place yesterday. Everything is in boxes so my food has consisted of candy and Taco Time veggie burrito and Mexi Fries. I imagine it will continue for a couple more days until the kitchen gets unpacked.

2 veggie burgers w/ 2 slices of provolone (but no rolls - just the burgers/cheese)
broccoli, mushroom, and tofu in a black pepper sauce

charcoal grilled tandoori chicken with saffron basmati and asparagus. one of the best meals i've ever eaten, and i have leftovers for lunch today!

yeah, the post-race beer was good too ;)

homemade pizza without sauce... mushroom, green pepper, olives, red onion, a little bit of cheese with a drizzle of olive oil, salt and pepper on a tortilla wrap!
