i think you could attach that minoura to point straight down rather than slanted backwards which would give more space. I've got the same bike and minoura with a pez bag. works fine.

flip the minoura mount upside down. the bottle will still be lower than your back, and you'll have room under your seat. you may have to get a shorter bolt for the cage, or it may poke you in the butt if you ride back on your saddle. if i get a chance ill throw mine on, or look for a picture with it.
