I figure on 1.5 pounds per day in the summer (and that's all dehydrated). According to my through-hiker friends, that rule of thumb works for trips up to two weeks. After that, you will have burned most excess body fat and you need to bump up the food to 2 pounds per day.
That 1.5 doesn't include any reserve, but I've found it is remarkable accurate, maybe +-5%.
