Maybe because when you watch amazon and netflix you are not storing all that data on your computer. My wild ass guess is that your computer is the bottleneck. There are multiple versions of every movie at different levels of compression and resolution. When you click the 'play' icon, the content provider does a quick download bandwidth test to your gear and then sends the best version that can be sustained. To provide better picture quality, Amazon Web Services (AWS) pays for storage at hundreds(?) of different sites so the content is closer to the user. Shorter transit + fewer network switches to cross means your bandwidth test gives a higher number (due to packet protocol used). Netflix years ago contracted all content delivery to AWS, so they can pay for as many remote locations as they need to match desired service level.
Maybe Apple hasn't done a comparable level of content distribution. Brian
