Induction cook tops

Experiences. read enough so I think I know the pro's (fast heat, high heat) and cons ($$, and for me new pots)

I've had one about 2 years, I love it. You missed easy to clean on your pros that is what pushed it above gas for us, and the cooler surface while the kid learns to cook.

I haven't found any cons you didn't list, for price they range in price some are cheaper and since we were comparing to gas they were pretty close.

My boys (12 and 14 years old) cook on our DCS gas stove and are pros at everything from salmon, shrimp, scallops, ribeyes, flipping omelettes, and over easy fried eggs.

However, I would love to get a sous vide immersion circulator for them.

The only real con I've found is no aluminum pans. Which make things like a mocha pot not work. The heat is quick to adjust like gas and the surface is not hot like electric.
