I still don’t quite understand what is necessary to install the Aeria Ultimate stem and bottle.
Maybe you or someone else can clarify for me.
Do you need to remove the 25mm spacer under the stem in order to install the hydration system? If so do you need to cut the steerer in this case?

You only need the Aeria stem AND bottle, together. The stem has a c-channel receiver bolted into the base of the stem. it’s here that you slide the bottle in and affix it. There’s no way to retrofit it to any other stem; the two go hand-in-hand.
So you don’t need to remove the spacers in any way. The Profile Design website shows the two units, but there’s not really any visual as to how the two interface. You simply replace a stock stem with the Profile stem, slide the bottle onto the bottom of it until it clicks into place (it’s easy to remove with the release tab) and that’s it. Super easy.

Shows that it has 12.2 Angle.
The 2019 Canyon Speedmax CF Size Medium comes with a stem V21, 80mm, Angle -17 degrees.
Is it correct that I can remove the Canyon V21 80mm stem and use the Aeria Ultimate 70mm (or 100mm) Stem V2 and it will be the same angle?

The number you’re looking at for the AU stem is the stack from base of the stem to the bar centre. Angles don’t work so well for the dropped stem designs like AU or Syntace Flatforce.
The Canyon stem is fairly tall for a -17 so you’ll be looking at ~15mm lower with the AU stem (I don’t have the exact numbers to hand)

There does seem to be a typo in the product description on your website:

It says the same next to stem length in the product selection button.
But then in the pictured diagram it shows 12.2m mm stack and 17 degree angle.

I want to add the Aeria hydration system to my Speedmax CF 8.0 (frame size medium). I’ve read through this thread and the generic Speedmax one, but still have some questions:
So I get the part that I need to add the AU stem & hydration system. My local bike shop is gonna help out, but they asked for some guidance. What exact modifications are required afterwards? And do I also need to replace the current / stock bento box (see attach)?
I’ve also done a bike fit in the meantime and some spacers were added underneath the aero bars. Will switching to the Aeria system impact my positioning? If so, how can I return to a similar positioning while avoiding a new fit?

Spacers under the aero bar pads will be fine, switching the stem will not change that setup, only change will be bringing the handlebars slightly closer if using the 70mm or further if going with the 100mm (stock stem is 80mm IIRC).
The only modification I needed to do was to sand down the spacer. It works as a tongue in groove system with the standard stem. The aeria stem does not have the groove so it will not sit flush and you will not be able to screw the headset cap back on.
I also rerouted the front brake cable through the new stem, but that was very simple. I think the 100mm has another exit point that can be used for the right shifter cable but that’s based on viewing photos from this forum. That would be a more complex cable to re route.
When using the stock 25mm spacer the bento sits flush with the top of the stem. If you slam your stem and remove the spacer and cut the steer tube there is a shorter bento that will sit flush with that setup.
I am currently having trouble with the bento rubbing against the stem when turning the handlebars >20° to the left. I think someone else reported theirs was also rubbing. You may want to look out for that.
It’s a sweet setup when it comes together. I also replaced the bite valve with a CamelBak one and will be getting a longer tube. The stock bite valve wasn’t giving the best flow but you can pop a CamelBak bite valve right in the existing tube easy peasy.
Have you been able to get the short bento?
I’m using the spacer so the stock bento sits flush, I don’t have a need for the short bento.
Do you a pic of this setup?
I will be using a tririg brake up front so the stem appears to be set up for that already, but curious where you have the cable going into the stem. And for the rear cable, do you have it routed internall in the stem as well? How sharp a bend are brake cables able to take in situations like these? it would so much better if the canyon base bar had a hole cut out where the stem clamps on

Not an XS, but I took some measurements with my medium. There’s 2.5" between bottom of the hydration to the brake mounting bolts. Less for you I assume. Also to note, this is with the 40mm spacer under the stem that the Speedmax ships with
With the ultegra brake your cable won’t be hidden.
With a tririg brake, I imagine the hydration would overlap the brake a bit but shouldn’t be a problem. There’s plenty of space behind the bottle and under the fairing
