It really does make you wonder what we’re defending over there. Illiteracy is something like 80% among women and they want to keep it that way.
This reminds me of how some people with mexican heritage get pissed off if you call them latino
and others get pissed off if you call them hispanic

It shouldn’t remind you of that because it’s completely different. Latino and Hispanic are 2 different terms for describing the same ethnic/cultural group. There are some very strong personal preferences for one term over another, but technically the 2 terms are interchangeable.
Afghan, Arab and Muslim on the other hand are terms which refer to very distinct - though admittedly in some cases overlappping - groups. The term Muslim refers specifically to followers of the Islam religion and has no connotations of ethnicity - there are Muslims in every part of the world and of every colour of skin. The terms Arab and Afghan refer to the ethnicity/culture from which somebody comes and are pretty much mutually exclusive. Both groups are strongly associated with Islam, but by no means exlucisvely - there are plenty of Arab Christians.
Lumping all Muslims together and referring to them as Arabs is about the equivalent of lumping all Christians together and referring to them as Italians.
