Have not seen course - but if it’s like most of the front range riding it will be loose pea gravel. I would go with 2-2.2 tires with decent traction. As for tire pressure - depends on body weight and tubeless or not. I will be riding Specalized Captains 2.2 front and 2.0 rear with 18 front and 21 rear (or there about)
On a rigid fork hard tail I ran 35 (or so) psi rear and 30 (or so) psi front as my sweet spot for traction and avoiding pinch flats.
If it is an “off road mountain bike” course, I would think you would almost certainly be better off running the off road mountain bike tires (the 2.1’s).
