decided I want to grow out my beard this winter. looking for advice from those who have beards how they keep them from being super dry and itchy during the winter. between the pool, cold and wind being outside it feels super dry and scratchy. thanks for the help.
You’re doing it wrong.
It’s just a phase of the growth in my experience.
Mine gets super itchy from about 5 weeks up to about 10 weeks (rough guesses), and then stops and is fine.
I’ve never bothered with any beard oil etc. Only maintenence was a mustache trim every week or so.

This. I would say the itchy phase for me is far shorter than the 5-10weeks maybe 2-3weeks.
Outside of that, I just make sure I give it a good shampoo once a week with all the S,B,R. never had an issue.
I use Permafrost Beards Beard wax and oil. My beard gets about as course as steel wool if I don’t. Fun to rub on my kid’s bellies but not so much fun to brush out without the product.
And, why wait until the off season for a beard? Fear the beard!
I’m the opposite… I usually shave the beard off for winter as it gets covered in ice (or frozen sweat/breath) on the bike and feels awful under a balaclava (or gets iced onto the balaclava and I have to wait to take it off till it thaws). But I’m living in MN, so winter is really winter here. When I do have the beard (most of the time), I keep it trimmed, shampoo/condition frequently, and as long as it is short enough, use the same moisturizer I use on the rest of my face and work it into the skin. I also use a beard comb in the shower which is just the right combination of stiff/soft to exfoliate the skin and slough/remove dry skin. I can grow a pretty thick beard, so if it gets long, the conditioner works a lot better than the moisturizer which just gets caked in the hair.
If it is itching past the initial growing phase after swimming, you may just need to wash it out more. Easy with a thick beard to not wash it right. On the note of wax or beard oil, I have never used it and I have had a beard for 19 years. When it gets long it sometimes gets itchy, but found it usually happens if I do not shower/wash it out immediately after sweating a ton in a workout.

I find it interesting that you shave yours off in the winter. I just moved out of Northern WI last year. During the winter it was a massive benefit to have mine for running out in the negatives. Yeah, there was a lot of ice on the beard at the end of a long run but my face was always warmer with it. I can stand face masks or anything else like it. Just goes to show everyone is different.
