I know there is a boatload of info about this disc cover as I did a pretty thorough search here on ST. However no real answer on if this will work or not…

I don’t believe it will work as-is. I would recommend if you are bent on using it, that you put velcro on the outer diameter of the cover, and on the part of your rim below the brake surface and attach it that way. There may be some cutting involved as well.
My real recommendation . . . buy a wheel with an ultegra hub and a Mavic Open Pro or MA3-type rim and use the cover exclusively with that wheel. I think such a thing can be had pretty cheaply off eBay.
