With this information and given my LBS is a Giant dealer, if I decide to buy a new bike, it’ll be a Propel.

Don’t necessarily need the stem to make it work. You will likely be able to use the clamp on similarly shaped and sized stems, as long as you can fit a bit of rubber or silicone gasket in.
Apologies for the cluttered background, but pic is with the 12.5 degree wedge and 5mm spacer. I settled on combining the 7.5 and 2.5 to get the same angle I have on my TT bike. I think if you sourced 5mm longer bolts than supplied you could run the 12.5 with the 2.5.
It’s a pretty tidy set up. Sufficient space to still use the tops for climbing and aero eyeball clean from the front.
