Steel oats prep and recipes

Tried steel oats this morning for the first time and it was ok. I soaked them overnight then added some banana and little bit of honey, popped it in the microwave for a minute and ate it. I was looking to see how you all prep your oats and what you add to it. Not sure if I prepped mine right, it was still pretty chewy in the morning.

I put 3 cups of water in a pot on the stove and wait for it to boil. Then add 1C of oats, turn the heat down and simmer with the lid on for 30min. After 30min I remove the lid add 270ml of milk, 100g of raisins and simmer with the lid off for another 12min.

This makes 3 servings. I eat one and put two in the fridge to be eaten on subsequent days. I just microwave them to reheat.

If you’re time crunched in the morning you could just make a batch in the evening.

Sometimes I use apple, cinnamon and brown sugar instead of raisins.

Try this,

Summer Porridge:
1/3-1/2 cup old fashioned steel cut oats
1/3 cup milk
1/3 cup yogurt or Greek yogurt
1 Tbsp chia seed
1tsp honey or other sweetener
a handful of frozen fruit of your choice

throw it all in a jar, shake it well to get everything mixed really well, and then put in in the fridge for 8-24 hours and then eat with a spoon.

Delicious!

4 cups of water, 1 cup of steel cut oats, whatever fruit, cinnamon, etc. that you want to add in

Cook 8 hours (overnight) in the slow cooker and its ready for you in the morning.

I haven’t tried the slow cooker version, but may have to. I make mine the night before
1-2 tbsp butter or coconut oil,
1 C oats,
4 cups liquid: I usually use 2 C water 2 C whole milk for pre-ride or post-workout food. If its pre-run I’ll just use water. The fat from the milk tastes better, but sits in the guts too long to eat and then run
salt

melt the butter/oil, then toast the oats until they smell “toasted” not burned.
add the liquid
get to a boil
simmer 30-40minutes

I usually make it the night before, then warm it up in the microwave

Wow, you guys are over thinking this. I put 1/2 cup oats with 1-1/2 cups water in a large bowl. Nuke for 2 minutes and done! Mix some stuff afterwards and enjoy.

Steel cut oats will not cook quickly like that in the microwave, they are not the same as quick oats. They need to be soaked and/or cooked for a while. If you have a rice cooker, that should work pretty well (just don’t load it up more than half way or so, there will be more foam than with rice).

I cook a large batch for the week.
3 cups oats
12 cups water
After cooked:
2 whole diced apples
1 cup of cranberries
add honey to taste

I know. I don’t buy quick oats. Works for me.

Yeah I like rolled oats better. Steel cut is okay but takes too long to cook.

Toast them in a pan, when they start to brown turn off the heat, add water in a 1 to 1 ratio (I prefer it drier) and cover. Let sit for 15 minutes. Add a little maple syrup, cashews, and cacao nibs (sometimes some Bell Plantation PB2).

I make a big batch once a week & re-heat daily, adding in fresh berries and bananas if in season, dried tart cherries if not.

8c water, 2c oats. Heat at rolling boil for 5 min, then down to simmer for 30.

At the end, I add in some almond milk, maple syrup, fresh ground cinnamon & nutmeg, a few splashes of vanilla extract, and a dash of almond extract.

Super easy… and seriously, I could eat a gallon of this!

I might be confusing rolled oats with steel cut. I’ll have to check.

If you have access to Costco, Coaches Oats are steel cut oats that have been lightly toasted already. They cook up very nicely in a microwave. 2/3 cup of Coaches Oats plus two cups of water nuked at 70% power for 5 minutes. Stir in some blue berries or other yummies, let sit for a couple of minutes and they’re really good.
This from a guy who did the over night slow cook of steel cut oats for years and prefer these due to ease of prep, texture and flavor.

YMMV,

Hugh

Do you prefer them completely porridge-like or with a little bit of tooth? I prefer the latter, so it’s just a matter of throwing all the dry ingredients in the night before (oats, raisins, almonds, pumpkin pie spice + extra cinnamon, salt, brown sugar, and a splash of vanilla) and then filling the pan with whole milk to just past the point where all the dry ingredients get covered. Bring to a boil-ish, stir frequently, cook for about 5 minutes and let sit in the pan until it’s the right temperature to actually eat.

It sounds involved, but I walk to/from the kitchen to take care of the rest of my morning routine while this is all going on…doesn’t really take much more time than pouring a bowl of cereal.

If you like it as total mush, I’m useless. I enjoy the texture.

Clearly you are. Steel cut oats are about the size of quinoa. They don’t actually look like oats.

This is my favorite:

I’m also a big fan of the Muesli from the Feedzone.

1/4 cup steel cut oats
half of firm tart apple chopped
1-2 TBLS chopped toasted walnuts
1 TBLS honey
splash of milk or greek yogurt
sprinkle of cinnamon

Cook the oats in 1 cup boiling water till done. It takes about 20 minutes for the McCanns oats. Add the other ingredients and enjoy. This serves 1. You can cook 1 cup of oats in 4 cups boiling water and store what you don’t eat in the fridge. Just reheat and add other ingredients. I really like to add a little dark chocolate and crunchy peanut butter sometimes, but then I feel like I’m eating dessert.

I like 'em chewy. That’s why I don’t eat that horrid mush that happens with rolled oats (EWWWW… never liked any oatmeal at all ever until I had chewy steel cut oats from Bob’s Red Mill).

Night before: boil water.
add oats, immediately cover and put in fridge.
Next morning, warm up for 5-10 mins.
Perfection.

But again, I like that they are still chewy. If you want steel cut to turn into total mush, use the slow cooker over night.

Buy a rice cooker with a timer. Throw the oats in there with 2.5 water to oat ratio. Then set the timer for the morning and when you wake up you have perfectly cooked oats that you can add all of the otter fancy ingredients suggested in the other posts of this thread.

FYI Zojirushi makes the best rice cookers on the planet. Ours gets used about 10 times per week and is still going strong after 7 years.
