never really gave them much thought until I broke one. Bought new pair of “salsa” skewers for the roadie but the weight/aero profile looks at a glance to be better than the stock shimano skewers the came on my (used) P2.

would it be advantageous to switch them to the P2 for race day or leave the stock on?

Takes the guesswork out of how much clamping force you are putting on the dropouts. Let’s you align the lever any direction after you’ve clamped it down.

they look awesome, but $80 for a pair of skewers? Are they really that great?

The stock skewers suck. There are lots of lighter better options. It’s a cheap upgrade. You can use the salsas on the race bike full time.

Personally I’m running Halo bolt-on skewers on both my training and race bikes (cheap , aero, light , and sweet looking). I just keep a hex key in my flat kit.

Yup, and they are $60 (vs. $12). Just depends on your definition of value.
