Have you checked out Steve Hogg’s article? He gives a general overview of the SMPs available at the time of the article and where his experience differs from Selle’s recommendations.
On my road bike I ride with the Evolution, because my road bike shorts have so much padding the lack of padding on the SMP is mute. It’s a great saddle!
In my experiences with them the width is the key part to get right… the rest is just a matter of preference on padding. Once I knew I personally needed the wider versions, then I just chose based on expected time on the bike
Part of the preference may also be in the length of the “tumblehome” or how long of a U shape there is between the nose of the saddle and back where your sit-bones rest. I’ve used a Stratos and Lite 209 on aggressive road bike fits, but neither will work on a tri-bike where I have the Pro model. The Pro has a longer distance (wider U shape) for my pelvis to settle into. This isn’t a padding issue for me, it is a distance width (forward-back, not side/side) of the tumblehome.
I am a little larger than you, however, 6’1" / 185lbs.
