Self sharpening knife block

Anyone have one? How well does it work?

Don’t have a self sharpening block, but do have one of these. For home use, you can do a few quick passes every week or so and have extremely sharp knives (and you can do the full double sided sharpen if you want it extra sharp for something specific).

I feel like a block is going to give you at best an okay sharpen every time, but not have the option to give you a really good edge and you’ll be taking some metal off the knife each time you use it.

which stone do you have?

We have one. It seems to work just fine. About every 4-6 months (or when we carve a Turkey or something) we’ll get the knife sharpener out and make sure they are super sharp. Otherwise, as long as I slide the knives in or out of the block at the correct angle, they stay very sharp.

We used to have a set of Wiltshire steak knives with a sharpening block. The trouble is that they abrade the knives fairly aggressively so the knives developed a concave cutting surface. Okay for cheap knives as they are always sharp. Don’t know how well they work with really good knives. Might not be enough force to sharpen properly. And good knives you don’t want to lose a lot of steel each time you sharpen.

For good knives I just use a 800X water stone.
