Compost.
Eat it?
Good question… I’ve heard of carrot pulp for carrot cake, and greens for soups.
My problem is I mix all my juices - carrot, cucumber, apple. Or Graprfruit, beet, celery. Or whatever.
Usually the mix of pulp goes down the garbage disposal.

If you use a lot of fruit you can mix it into pancakes, waffles, breads.
If you use a larger ratio of vegetables, mix it in with some chicken broth and you got a good tasting soup.
I just got into it too and had a mixture of beet/carrot/apple/spinach the other day and put about a cup of it into a meatball recipe and they turned out amazingly well
.
Use it as additives in other dishes, and the fruit pulps make great sorbet’s or toothpick pops.

might as well use a blender then, and drink/eat the smoothie/sorbet!
put it in veggie patties (burger type things). Black beans, brown rice, spices and some pulp. beet pulp makes it look most like real meat burgers.
Make your own Marc de Pays - a particularly nasty type of spirit, made from the leftover mash after grape fermentation, guaranteed to give you a monumental hangover. Could be illegal.
i make carrot-orange juice and use the leftover pulp to make muffins. really tasty.
ditto what the others said on veggie juice - boil the hell out of it, throw in some noodles and/or chicken bits, and you’ve got a mean soup.

Lose the juicer that removes the pulp. The pulp has a lot of the good stuff you want from your fruits/veggies whatever you’re juicing. Fiber slows the rate at which the juice raises your blood sugar, too (most of the time you want lower glycemic foods, and the pulp will help contribute to a lower glycemic load…)
I got rid of my juicer that pulled the pulp cause it took so damn long to clean as well. Pain in the butt.
Vitamix, baby, vitamix.

It makes an invigorating and rejuvenating facial mask, especially if you add a bit of cucumber. With carrots or beets, you get a mask that helps prevent sunburn.
the pulp scares me a little…no matter how well you clean, there is still some nasty stuff that goes through the juicer. I think the last lettuce ecoli scare was organic. With that being said, I make muffins, and also mix some of it in my dogs food. Make sure you check if the vegetable is not toxic to your dogs…
I freeze it and use it for Deer bait. They love it and I like to eat them so it works out. Other then that compost it. Does not have much nutritional value left in it. Baiting is allowed by law where I live. Just saying!
Put a pinch between your cheek and gum, start a new trend, healthy dip.
