Anyone recommend a device that I can point at my computer screen to change settings as I ride so that I don’t have to use mouse / pull table closer, lean over, etc…

There isn’t anything you can just “point” at the screen, but something like a handheld trackball would probably do pretty close to what you’re looking for. Wired and wireless are available.

I think what you are looking for is essentially a gyroscope remote that many smart TV’s have.
You could try something like this with a Garmin mount on the back.

I was just thinking about this last week - Zwift should have a ‘Zwift Controller’ as using mouse / keyboard is a right pain!

Looks like all apps should have their own companion apps for easier control. 
Get an Elgato Stream Deck. Comes in various sizes, but I use one and it makes everything for Zwift a button-press. Can program soooo many things on it.

Going to put a third commendation on to this item. I tie a string around the loop and let it hang from the aerobars.

This setup actually works quite well, though I just keep mine on a table I have next to the bike/trainer. Range is good, and battery life is excellent. The trackpad did have some issues when touched with wet fingers (sweat from either me or my water bottle), so I bought a trackpad cover & trimmed it down to match.
