I believe I remember hearing something how Shimano prefers their factory teams NOT run an aftermarket OSPW because they can’t guarantee it’ll work smoothly 100% of the time.

Yup. Pretty much won’t ever see an actual Shimano sponsored team running anything else.
There’s a time and a place for each. In TT World Champs go for every little thing, a dropped chain and you’re out anyway, may as well take the risk for the extra 1 second. But in a Grand Tour you’re more about risk minimizing (in the TT’s) than speed maximizing.
