Vertigo Bikes in Queenstown. They do all types of tours. If you’re really looking to get into some crazy s#%, they will take you out on a helicoptor and drop you out on some single track that has huge elevation drops.
I didn’t do the heli tour, but had a great time going down an old mining trail last with them last year. Good guys.

I grew up in Central Otago and there’s heaps of bikes down that way but I’m not a MTBer so I can’t help more than that sorry.
The Otago Rail trail is meant to be good. More of a scenic tour than a mountain biking blast:
