I'm bored with my food

Ok, I have decided that pretty much everything for meals is one of these things:

  1. Cereal
  2. Sandwiches
  3. Spaghetti
  4. Chicken breasts with spaghetti sauce
  5. Fruits, veggies, energy bars, yogurt, etc are all compliments to the main meals.

I have been eating like this for years now. I’m kind of sick of it. Does anyone have any suggestions for other simple and easy things to make to spice up my diet a bit, please? I think I’m going to go insane if I keep eating like this. I need more variety.

Thanks for your help in keeping me full, sane, and healthy.

tortilla’s, black beans, rice, a bit of cheese, hot sauce and avocado. Add a protein and you are set. Burrito!

interesting to see what you eat after our posts on the thread about fat people! we eat the same things. I assume that you cook for yourself, too, and eat things that are convenient. I bring my lunch to work every day, so portability is a concern for me. I’m curious to see what other people suggest.

I’ll PM you a recipe for black bean lasagna that originally came from the American Heart Association cookbook. I give it out all the time b/c everyone seems to like it. I will usually make it on a Sunday, and even if my roommate and I both eat at it, it lasts most of the week. It’s pretty filling and cheap.

I know this won’t help in the big scheme of things, but I love frozen grapes (seedless red grapes only) after a hot workout.

Same here. I like convenient food that is somewhat portable. Bring my own food to work as well.

Thanks (in advance) for the lasagna recipe. I may make it this weekend since I’m going grocery shopping tonight.

thanks.

LOL!! I expect nothing less from you!!

ST is now a book club and a recipe swap… maybe I should get my mom signed on! =)

BTW- while you guys are racing Sunday, you can assume I will be up at Los Hermanos at some point getting my fix!

oh will you send to me too!!? I tend to eat the same stuff all the time too. Lots of salmon, talapia and veggies for dinner. Lunch is usually cottage cheese, an apple and a bread of sorts. Breakfast, berries and non fat plain yogurt. Usually a purefit bar in there somewhere too. Oh yeah and nf fro yo almost everynight!

Where’s the beef? Lean red meat…it’s not gonna kill ya!

How about some pork?? It’s the other white meat, you know…

Fish?

If all I was eating was what’s on your list, I’d kill myself inside of two weeks. I don’t know how some of you out there survive on this stuff.

Eric, be honest…that spaghetti sauce - is it coming out of a jar??

I’m betting the answer’s yes which means that your a man in desperate need of some cookbooks. You have no difficulty being on this site, so try this exercise:

  1. Go to the address window of your internet browser.

  2. Type: www.epicurious.com

  3. Pick from thousands of recipes, most of them extraordinarily simple, alot of them pretty healthy - in moderation.

Start cooking!! It’s easy…you may even think it’s fun. And if you’re not married, it’s a great hook with the opposite sex. Worked for me - found out early that the quickest way to my wife’s heart was through her stomach!! In more than 10 years, I think she’s cooked maybe half a dozen meals… Hey wait a minute, maybe this backfired!!

ice cream…unless of course your sandwiches include ice cream sandwiches…then I don’t know what you’re problem is
.

I never miss a chance to pick the perfect food

Miami, I would be interested in that Lasagna recipe as well. Post it up here if you don’t mind.

Enjoy The Brothers on Sunday Kerri. I’m set on outdoor seating and Rib’s from Houstons Sunday afternoon.

How’s about I just post it?

I was also thinking (b/c I was just eating one) that I buy a lot of these fruit leather strips called “Stretch Island Fruit Leather 100% Fruit Snack.” They’re all fruit - no added sugar, no preservatives. 45 calories each and equal to 1 serving of fruit. I tend to run out of fruit really fast (it either goes bad or I eat it all) and rather than go to the store every 5 days, these are a nice way to have “long-term” fruit. I think they are like $.35 each and I keep a big bag of them at work.

Sunday I went to the store and bought a bottle of Newman’s Own Balsalmic dressing and used it to marinate some chicken breasts, which I grilled on the George Foreman. Been taking those to lunch every day and eating with a salad. Salad is the same dressing, Spring mix greens from Fresh Express, chopped cucumbers, dried cranberries, and sliced almonds. You can add a red onion if you like bad breath.

here’s the recipe for the lasagna (from the Amer. Heart Association cookbook):

2-16 oz. Cans of black beans – rinsed, drained and slightly mashed

1 C commercial salsa

2 C low-fat meatless spaghetti sauce

1 tsp bottled minced garlic

1 tsp ground cumin

15 oz. Low-fat, low salt ricotta cheese

1/3 c grated or shredded parmesan or Romano cheese

1 egg white

¼ c skim milk

vegetable spray

6 (3 ½ x 6 ½”) lasagna noodles (soak in very, very hot water 15-20 minutes before using)

1 c shredded low-fat Monterey jack

1 c shredded part-skim mozzarella

Preheat to 360 degrees

In large bowl combine: beans, salsa, spaghetti sauce, garlic, cumin

In medium bowl combine: ricotta, parmesan, egg white, milk

Spray 13 x 9 x 2” baking pan w/ veggie spray

Spread about 1 C of bean mixture in pan. Cover w/ 3 noodles (makes sure noodles don’t touch the sides). Cover the noodles w/ ½ of remaining beans. Spread ½ of the cheese mixture and ½ of the Monterey Jack and ½ of the mozzarella cheeses. Repeat layers of noodles, beans, ricotta, Jack, and mozzarella.

Cover dish w/ foil and bake 30 minutes. Uncover and bake 10 more minutes (or until noodles are done). Let stand 5 minutes (but I think 10-20 is better b/c sometimes it needs to cook up so that it’s not so liquidy).

That’s all. It’s easy. =)

How about ground turkey? My wife must have half a dozen recipes. Ground turkey meatballs in a sweet & sour sauce over noodles, ground turkey patties instead of hamburgers, ground turkey with refried beans over tortilla chips, ground turkey meat loaf, ground turkey w/low fat cheese and sauce over flattened out biscuits (mini pizzas). Jeez, sounds like I eat a lot of ground turkey!

Also, what about peanut butter or better yet, almond butter? Wonderful on almost anything.

Grill it up! (The secret to grill cooking is lower heat. My grill is almost on the lowest setting. Don’t overcook, or undercook for that matter). These are some grilling favorites of mine and are all pretty damn easy and quick to make…

Chicken Breasts with Cilantro Lime marinade

Carve some red/orange peppers like a pumpkin and put some feta inside. Throw the entire pumpkin on the grill and cut up when they are done, Yum

Corn on the cob. Throw the entire thing (without peeling) on the grill

Chicken breasts with good ole BBQ sauce.

Lean Steak

Toasted everything bagel, with chicken, honey mustard, baby spinich, cheese

Salmon with Honey Mustard

Ahi Steaks

Barbara’s cereal

Cook all kinds of veggies on the grill. Cook them whole then cut afterwards (won’t fall through the cracks). Put a little olive oil on top. Onions, Zuchinni, are really good!

YUM!

Chocolate covered marshmallows. Yum.

Chicken and spaghetti sauce? You can do much better, with some very easy recipes. My inspiration:

I’m a little bias since, I designed the site… But there are some great recipes!

Get a wok…make stir-fry. I like peppers, onions, garlic, tempeh, tofu, chicken, carrots, celery and peanuts in mine. I dump it over brown rice and maybe have a spicy peanut sauce to pour over it.

Check at your grocery store and see if they have hear-and-eat entrees. I am not talking about something you find in the frozen food section. Look in the meat and poultry section. The store I go to typically has a selection of meat and fish dishes that they prep fresh each day and that are ready to be baked or grilled. They include instructions on how to prepare so its pretty idiot proof (speaking as a kitchen idiot).

Add some steamed vegetables and/or a salad and you’re all set.

I would suggest you to get some comments from “cidewar”, he usually cooked during Sunny AZ training camp and as far as I can remember we haven’t repeat a single meal during the entire camp!

Oh, maybe we can bring a bottle of wine and talk about boys all night long, too! (I’m kidding)
