How bad? Compare it to the turkey in Christmas Vacation.
Not that bad. The breast meat was a tad dry. I’ll probably take the dry white meat and shred it, and then combine it with barbecue sauce or some other moisture in order to do something decent with it.

I lucked out, came up from the man cave a little earlier than expected, threw the thermometer in it, and BAM! Done. Phew.
However, Mrs. Quads was taking a nap (probably due to listening to me play guitar all morning) and I didn’t want to wake her up, so I made all the sides, salad, homemade pretzels (our newish family tradition is to play a board game after dinner - while eating homemade pretzels) and set the table. Turned out great but I’m spent.
Next time, spray some Pam on some foil and wrap the wings with it, and keep an eye on that thermometer!

Tonight it is the Star Wars version of Risk. Picked it up (unopened) out of the recycling bin this summer. My son is a HUGE Star Wars fan, now all I have to do is get this damn kitchen cleaned. Luckily I moved a 32" flat screen into the great room this morning and am streaming the game…

Just about impossible to over cook a turkey.Two easy steps a implanted pop up indicator and a digital thermometer both set for 178 degree.Better luck next year and limit 2 cocktails until the bird is ready to rest you dropped the bird on your watch.
18 lb turkey, brined 16 hours, roasted in a convection oven at 400 for 2.5 hours until thermometer hit ~160 in the breast, rested for thirty minutes…done perfectly.

Gotta brine the turkey. I also brine pork and chicken. It keeps meat moist even when overcooked.

Yeah, I know. I overthought things and decided that it needed to cook a bit longer. I was trying a new method for the first time…I butterflied it and laid if flat on my Big Greenn Egg to grill it. I figured initially that it should take about 1.5 hours, but then thought that wasn’t very long, and maybe 2 hours would be better. Wrongo…1.5 with 15-20 minutes of rest would have been perfect…shouldn’t have second-guessed myself. Rats…

Yup, been frying them since 2000. Have used the turey fryer to cook up chicken wings as well, can easyily fit 5lbs a shot.
Though I haven’t tried a brine yet, need to add that to my to-do list.
Do a re soak in warm chicken stock .
Deep frying makes the juiciest birds .
