I love this version - tweaked from one that Bree Wee posted on her blog. It’s not as cake-like as traditional banana bread recipes, more fudge-like consistency (but not chocolate
bonus - it’s gluten free if made with g-free oat flour.
4 bananas, mashed
1 egg
1 1/2 c oat flour
1/4 c agave syrup or honey
1/3 c coconut oil
1-2 tsp vanilla
1 tsp baking soda
2 pinches sea salt
5-6 shakes cinnamon
Mix coconut oil and mashed up bananas. Add in egg, vanilla and agave. Sprinkle in baking soda and salt. Add flour last. Pour into a buttered loaf pan. Bake 60 minutes at 350.
I love it warm with a little peanut butter on top.
