Healthy Banana Bread

I eat a lot of bananas but can’t get them all down before they turn brown. They pile up in the freezer. Does anyone have a healthy recipe for banana bread? Or another use for brown over ripe bananas?

Keep them in the freezer for smoothies.

Smoothies is the obvious choice. But you can put mashed banana in any sort of “sweet” bread like cakes or muffins and reduce the sugar a bit.

I’ve never made a smoothie. Do you use the over ripe, brown mushy bananas for them?

Take some rip bananas, oatmeal, molasses/honey, nuts, and other fruit (I like cranberries) and mash them all together then bake them like cookies.

Not quite banana bread, but very tasty and easy to take with me during exercise.

Banana Bread
Ingredients:
1 1/2 cups flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
2 eggs lightly beaten
3/4 cup apple sauce
3 tablespoons sour cream
2-3 ripe bananas mashed
1/2 cup pecans (optional)
Preparation:

  1. Grease loaf or 6-cup Bundt pan.
  2. Mix flour, soda, and salt.
  3. Add the rest of the ingredients, and stir until blended.
  4. Bake at 325 degrees for 1 hour to 1 hour 10 minutes.
  5. Let cool 15 minutes.

I’ve subbed the apple sauce with crushed pineapple with no ill effect in my version, but I also use the evil splenda in mine.

I don’t cook that often but this recipe takes like 10 minutes to throw together.

I make something similar, but use much less sugar - subbing in applesauce for oil adds a bunch. Also, you can use greek yogurt instead of sour cream.

I also like to add a shot of bourbon, but that’s not exactly healthy.

Sounds delicious and nutritious, but a monkey would go crazy waiting for this meal.

3 overripe bananas
6 eggs
3 cups oat meal
1 cup coconut (I use unsweetened, but you can can use sweetened and then you probably don’t need any more sugar)
1/2 cup honey (or other sweetener, but if it’s dry then cut back oatmeal some)
1 tablespoon coconut oil

Mix, put in muffin tins and bake at 375 for 10ish minutes.

Super easy, pretty healthy (especially if you use unsweetened coconut). You can also add nuts or dried fruit to it. A dash or two of cinnamon or anything really.

If you have a microwave, try this:

1:1 ratio of ripe banana/egg
whatever other mix-ins, I put in coconut flour to soak up some extra moisture, nuts, raisins, etc.
microwave the hell out of it (6-7 min.) until it pulls away from the container

pyrex works really well, any glass vessel should work as long as the “batter” isn’t more than ~1 inch thick

A smoothie can be quite simple. Banana, some milk and maybe some frozen fruit. You can complicate it as well by adding protein powders etc… One of my favorites is banana, almond milk, and frozen strawberries. So simple and so good. It works just as well with chocolate almond milk. Mmmmm.

1 peeled ripe banana
1 handful of frozen fruit (I buy the clearance fruit and chop and freeze it)
1 handful of spinach (you won’t taste it-but it does colour the drink
Half avocado (makes it smooooth like ice cream)
Couple drops of vanilla extract
Protein powder
Water
Throw in a bunch of blueberries to colour and anti oxidize yourself

Great for my kids who won’t eat greens or meat

How much sugar do you use?

My wife’s Bananna Bread,
2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup apple sauce
1 cup sugar
2 eggs
3 mashed well ripened banannas
Mix well an pour into a well greased pan. Bake at 350° for 45 to 60 minutes. Remove from pan. Cool completely.

I use a similar recipe but I use half wheat flour, half spelt flour, 1/2 cup brown sugar, egg whites, applesauce, no salt, no sour cream/yogurt, and I’ll add in walnuts and choco chips for fun!
