A couple years ago we bought a Camp Chef three burner camp stove (“Big Gas Grill”, great name when said quickly) with a single-burner griddle and two-burner BBQ box. We use the BBQ side so rarely that we just ordered a second griddle, this one to cover the other two burners so we will have all three set up as a flat-top grill. I love cooking on it due to the versatility and easy cleanup / fewer dishes. However, I need to widen my menu, especially in the area of non-meat products (says my wife). Any good recipes / meal ideas out there, including those with vegetables?

I’ve been looking at outdoor griddles for deck or rv use. I am liking the blackstone’s, maybe a 22 or 28 inch or tailgate version.
I did see one unusual recipe. you grill some fruit such as strawberries, mango, and pineapple. drizzle on some honey. At same time take a pound cake and slice it then brown it on the griddle so it looks brown like a grilled cheese sandwich. put a slice or 2 of the pound cake and add the fruit. And drizzle a bit more honey on top.
