What kind of pedals are best for gravel bike? Specifically Belgium Waffle ride?
Currently have Dura Ace SPD for rode bike with S-Works shoes.
Any advice?

I’ve been using ATACs on my offroad bikes for years. Decided to use them on the gravel bike too for the shoe convenience in rougher terrain. The new Cyclos look great, but seem to keep getting extended on release dates:(

I used Shimano XT’s for several seasons, but switched to the similar Shimano XTR PD-M9120 last year. It may be a placebo effect, but they provide a better platform for longer rides/events and I have less foot fatigue in the final hours.

I’m partial to Eggbeater Candys.
Love 'em on my mtb so I got them for my CX bike.
Very easy access and the platform provides a bit of stability
Most are going to use their favorite MTB style pedals. I use Eggbeaters on my MTB…so Eggbeater Candys on my gravel bike (just wanted a bit more platform).
Lots of good stuff on here already, but worth mentioning; you’d almost certainly be fine on road pedals at Belgian Waffle. You’re not going to be off the bike much if at all, and if you are, it’s really unlikely that you’re going to be sticking your foot in mud or anything that would clog your pedals up.
If you’re going to do some other riding that will mandate a more versatile setup, definitely check out some of the ideas on here. If it’s just BWR, you already have a great setup in hand.
I’ve been beating the snot out of a set of Shimano PD-m540’s for a few years now. They’re about to wrap up their third New England winter (granted this years was pathetic), been bashed against all sorts of rocks, submerged in sea water, ridden through sand, and still work perfectly with zero maintenance. I check them all the time expecting to find the bearings are blown, but can’t seem to break them.
I have these pedals and like them quite a bit. a little more surface area than my other shimano spd pedals but no issues clearing mud

I did BWR on road pedals (Ultegra).
Otherwise, I gravel ride on XTR’s (regular without platform).
As far as I know, the platform of the trail pedals does not contact the shoe unless you have either a very flexible plate or a flat-pedal (inspired) shoe.

Another Time ATAC user (although I’m talking OLD school - the kind below) on my MTB and gravel bikes. Great engagement and mud shedding, and they just keep going (obviously).
I could barely unclip my road pedals last year because of being fouled with sand.
I recommend Speedplay Syzr, for a MTB pedal with road feel.
