Honestly over the past couple of years, and especially since YT has become a lot more watchable (i.e. a better UX design) on most current TVs, I’ve definitely resorted more to YT than to other content sources.
One of my favorites was suggested in the LR sometime last year or the year before
Both of these are multi year channels/projects that are unfinished (and with regard to Tally Ho, likely remain unfinished for the foreseeable future).
I also enjoy channels like Andrew Camarata (not sure why, nothing particularly exciting). He’s a property maintenance guy in NY state somewhere but he does a lot of various projects for himself and customers.
Learn Your Land - Mushrooms, plants, trees, general nature stuff, very enthusiastic guy with lots of good info.
Stefan Milo - archaeology and human evolution
I really like Comics Explained. He does ~20 minute videos on different comic story lines from Marvel, DC, etc. It’s kind of nice to get a wikipedia like overview of the plot. It has helmed me enjoy MCU stuff a bit more knowing the background and being able to catch little easter eggs
Sam the Cooking Guy is hysterical and has us cooking more.
Ryan van Duzer if you like bikepacking.
I blame Tom Green for me now looking for a capable overlanding vehicle. I was never a fan of his comedy back in the day, but he is oddly entertaining with overlanding and exploring.

Doug Linker - he does carving projects. He has some videos where he carves without talking, and others where he explains what he’s doing. Gnome Home and Gnome Supply Run are very entertaining
Amazing Places on our Planet - Great video (lots of drone) of amazing and beautiful places.
Our Million Adventures - Family where the guy works from home (IT, I think) so they try different areas and experiences. Very informative and great video even though he has a small following. He recently climbed Mount Ranier and had some beautiful video of the sunrise from high atop the mountain.

I can’t stand Sam the Cooking Guy! I find him to be incredibly obnoxious, and his videos are too long and drawn out. But I do love cooking channels.

Millennial aged dude if Italian descent (like myself), cooks a lot of classic Italian dishes, lots of modern food truck type food too, his videos are shorter, to the point, he is passionate and his food is freaking amazing.
For BBQ it’s hard to looks further then Malcom Reed How to bbq right.
For Mexican I watch villa cocina. She’s legit.
Another great Italian one is Buon-a-petitti. It’s a guy who films his Italian grandmother cooking the classics. You can barely understand her, but it’s hard not to fall in love with that tiny, old, wooden spoon clutching Italian nonna.
Spain On A Fork has great Mediterranean recipes, but I have to watch on mute. I cannot stand the host’s voice.

Mark Felton Productions for really good info on some of the more obscure military history stuff.
Duzer is great. Watching his rides across America and the Great Divide were a great way to get through the pandemic. Felton does some really interesting stuff.
For the folks who like Whiskey, the Whiskey Tribe are very entertaining.
I think that Youtube is one of my favorite things about the internet. Need to change a water impeller on a 30 year old outboard, there is a video for it. Want to watch people canoe the Boundary Waters, there are videos.
Want to watch terriers hunt rats, hunt for rocks, catch fish, climb mountains - there are videos.
I think it is great in that people can create their own content and if it is interesting people will watch it. They don’t have to pitch an idea to someone who can’t see the appeal. Produce it, and you can find out yourself if it is a good idea.
