I don’t have an Escape but rather a Mercury Mariner, basically the same as an Escape. I drove from MN to TX with two bikes and lots of gear with no problem. I have a bike rack that goes inside the car that holds two bikes (take the front wheels off and attach the forks). The gear then fits in nicely around the bikes. I like being able to have my bike inside the car so I am always ready to ride (at least when it is warm outside).
My wife and own a 2009 Escape and a 2002 Mazda Tribute (Escape clone). Both are very tri friendly. Our Escape isn’t a hybrid but the internal dimensions are identical. With the back seat down you can fit two bikes inside upright if you remove the front wheels. Depending upon your frame size you might have to lower the seat post. We use bungee cords around the frame and shoulder harness anchor to keep the bikes upright. There is sufficient room next to or between the bikes for all the other stuff. Of course, if you need the back seat upright you can put the bikes on a roof rack or use a trailer hitch mount. I prefer to keep our bikes inside and out of the elements.

you can fit more than 2 bikes in there. 2 is easy with just 40% of the split seat down. I had 3 bikes, a bike box(cardboard from shop stuffed with “stuff”), 4 extra wheels, a trainer, tool box, couple of floor pumps, riding gear and personal gear in mine for one trip.
only issue is dependent on type of bike, ie a front end that won’t rotate 90 takes a little extra space, but one of the 3 mention above was that way.

Any recommendations/suggestions on bike racks that can be used for transporting bikes inside the Escape?
I use the one from Saris, but it’s a tight fit ( the saddles hit the roof ) and my saddle height is only about 26.4 cm, so hopefully it’s not too much trouble to change saddle height on your bike if your saddles are any taller.
I got mine from www.biketote.com, it is a Renniks Rack System; the 200 series. It works great, no need to attach it to anything so easy to take in and out. Enjoy your new Escape!
