Anyone have experience cooking up a breakfast burrito (eggs, cheese, etc) the night before, refrigerating it, and having it be good to go for say a mid-morning snack the next day? I wanna bring this to work (where I have an accessible fridge and microwave) in lieu of the same old trail mix, granola bar, yogurt, rut I’m in…any other good ideas that require little to no assembly AT work?
you should be fine! just wrap up the egg and cheese in a tortilla and refrigerate. it will stay cool, and will be fine once you warm it up.
my only advice on that is to scramble the egg to a dryer consistency, as if they’re too wet they will make your tortilla soggy and not so good. also, allow the egg to cool off to some extent before wrapping, this is better for storing and makes for a less soggy tortilla.
other ideas:
you can do “sandwich” wraps with turkey, hummus, hard boiled egg and vegetables, etc. whatever combo you like, pretty much you can make a wrap out of it.
also, what about a little container with refried beans and cheese on top? you can zap it and would be delicious and filling for a snack. you can also zap a tortilla and eat that together with the beans, or dip in carrot sticks.
cottage cheese is another great snack. if you have a sweet tooth, just keep a jar of organic jelly and drop a spoonsfull in the cottage cheese, it’s delicious! you can also use fruit; applesauce, peanut butter, nuts, etc. cottage cheese is very versitile and filling.
small salads loaded up with turkey, nuts, cranberries, hard boiled egg, etc. just put dressing in seperate container, as it will break down the lettuce if left on too long–so should just be added last moment.
sandwiches! get creative!
bagels from the bakery, use a little cream cheese with smoked salmon or whatever you like. fresh bagels are so filling, and are (what i consider to be) a luxurious food stuff. YUM
refrigerate pasta dinner left overs, drizzle in italian dressing and you’ve got a fast and yummy snack for the next day. add some olives, tiny mozzerella balls, and sliced proscutto and you’ve kicked it up a notch! your co-workers will be so jealous and impressed. and it takes about 2 minutes to put this together the night before, and can go in one container, eaten hot or cold next day.
meatballs in sauce. a jar of higher end pasta sauce with organic meatballs cooks up very quickly at home. once done, pop them in a container to fridge, and voila, you’ve got a very hearty and fast snack for next day. if you want to get fancy, put some shredded cheese or onion on top–all of it can be microwaved together in one container.
i encourage you to think about “real food”. stuff from a box is fine, but as you’re experiencing, gets old real quick. also, think about containers of things that literally can go from grocery store to your office–like cottage cheese, jelly jar, peanut butter, cream cheese. if you have these things already then just bring one or two things from home that you’ve prepared and you’re set up for the week.

smoked salmon fillet. this is one of my favorite things! buy wild salmon if possible. you can slice the salmon right off the skin, it’s so easy and is fantastic. put it on top of a little angel hair pasta that’s been dressed with olive oil, sea salt, black pepper, and you’ve got a really fantastic snack.
big container of pre=prepared fruit. yes, this is little more expensive, but is fast, healthy and very refreshing. eat in combo with some cheese! yeah babe. (buy a pack of smoked chedder, or whatever you like, just keep it in office fridge)
I go to Tacodeli and order a couple of tacos. That’s my recipe for breakfast tacos. Oh, I’m so addicted to them!

If you have a microwave, take in your own eggs and nuke them up. Add some shredded cheese, salsa and tortilla and you’re set.
so nuking raw eggs in the microwave actually works? Maybe I’ll give it a try…

You guys make some weenie breakfast burritos. Eggs and cheese microwaved? Let me assist you. Get yourself a grill or a pan, grill up some chorizo, onions, green peppers. If you are adventurous, get some of those pre-made Ore Ida potato chunks and grill those too. Add eggs and top with some cheddar or jack cheese. Place in modo sized tortilla with salsa of your choice. For the deluxe version, add some sliced avacados. mmmmmmmmmm-m.

so nuking raw eggs in the microwave actually works? Maybe I’ll give it a try…
Take a cuople of them and put them in a glass or cup or bowl and stir them up so they don’t explode, then nuke. Not sure how long, so you’ll need to test. I’d start with 40 seconds, but watch them.
