So if I went from a 53 to a 56 tooth chainring, what would be the minium I could use for a small ring? Any idea?

I think an 11 tooth cog is about the smallest one made. Even with a custom made one, I don’t think you could mount a smaller one.
If you’re using Shimano, I believe it is a 15-tooth drop. So that would be a 41-tooth small ring. Campy might be the same.
why are you going up from a 53 to a 56 tooth ring? are you riding 650’s or 700’s?
