Which is the better tool kit for someone who wants to learn how to do it all themself.

As much as I would like to get the Park Tools toolkit, I can’t afford it.

What’s your budget? What do you already have? Do you want a separate portable kit for your car or just one kit you shuttle constantly from car to home?

I have the Park rollup kit and I replaced the cable cutter right away as the Shimano version is ridiculously better.

My budget would be about $150 CAN. I would really just like one for home. I don’t go away too much with my bike.

I would recommend either the first or third out of the three you picked. The park tools rollup uses mini versions of some of the tools in exchanging size for portability and this is not something you need to worry about. Make sure that whichever hex key set you get has bondhaus ends - these are useful for hard to reach areas on the bike like typical water bottle bosses and some other mounting hex jobs.

Yesterday I got a Supergo flyer and saw the T1 toolkit (your #3) for $59.95. I was thinking of buying one.
