I don’t know first hand of any papers that demonstrate this but as someone else mentioned google scholar or even better: http://www.ncbi.nlm.nih.gov/ should get you something.
A credible nutritionist in the area was really singing the praises of beet juice at a seminar. Beet juice and supplements are expensive though so I usually just buy whole beets and throw them in my pre-race smoothie. Not sure if it actually improved my blood flow but the races have all gone well and it is a whole food so it’s not like its bad for me either.
