I recently reached out to the guy at bike Smith about having some ultegra 6800 cranks cut down. He informed me he cannot do it because those cranks are Hollow which makes perfect sense. So my question is are the 5800 / 105 crank also Hollow.

If it says it is a Hollowtech II I would say yes.
I don’t see it. Looking at my wife’s bike.

Cut down? In what sense? Milled out to removed some of the crank-arm material?
There are numerous reports of catastrophic failure of the Shimano Ultegra 6800 cranks and spiders. Perhaps not surprising given the sheer numbers of them that are out there and perhaps not unduly concerning in itself, but personally I wouldn’t want to do anything to make them any weaker.
