Andy Potts Pumpkin Muffins

Anyone else try making the muffin recipe in the new ‘Triathlete,’ billed as Andy Potts’s Pumpkin Chocolate Chip Muffins? My first batch just cooled, and these things are AWESOME!

Be advised, the recipe makes enough for ~18 muffins…or did for me. Not that that’s a bad thing. :slight_smile:

Wife and I are excited to make them too… Well actually I’m excited for her to make them for me!

Here is the recipe hope y’all over indulge and it serves to slow a few people down so I could actually taste a podium at some point in my life.

Andy Potts’ Pumpkin Chocolate Chip Muffins
Ingredients
4 - Eggs
1.5 cups - Vegetable Oil
1.5 cups - Sugar
14 oz. - Pumpkin Pie Filling
3 cups - Flour
1 tbsp. - Cinnamon
2 tsp. - Baking Soda
2 tsp. - Baking Powder
1 tsp. - Salt
2 cups - Chocolate Chips

Directions
Preheat oven to 400*
Mix together the eggs, vegetable oil, sugar and pumpkin pie filling.
In a separate bowl, combine the flour, cinnamon, baking soda and baking powder.
Add the flour mixture to wet ingredients.
Add chocolate chips.
Spray muffin tin with cooking spray.
Spoon the batter into the muffin tin and bake for 15 minutes.

especially since pumpkin puree (not the sweetened filling - just pumpkin through a blender, though both would work) can actually be used as a substitute for all or most of the oil in a recipe. same with applesauce (unsweetened for preference).

I haven’t tried the recipe as is and I believe the posters who claim the muffins are good, but I’d be willing to bet that they’d be even better if you used half cake flour and half all purpose flour. Perhaps substitute wheat flour for a bit of the remaining all purpose, too.

I believe that I have heard of people substituting lowfat yogurt for oil in muffins as well but we will probably do our typical and make the recipe as given for our first attempt then experiment from there. Heading to the store this afternoon for the ingredients will report back. The cake flour is a good idea to try so is the whole wheat flour and applesauce, mmm lots of possibilities. I’m going to need to step up from the 70.3’s to full IM to burn all the calories if these taste as good as they sound!
