Advice needed on coaching

I’ve been charged with coaching our university tri club this year (Now until end of April 2012). The need-to-knows: Mainly newbies and BOP (~25min 5k’ers) folks though a few stronger runners (~40min 10k’ers); we won’t have access to a track; two group runs per week; the club is more social than anything, so there will be some bicep workouts once a week at a campus pub. Seeking advice on:
How would you begin? I was thinking of doing 5k time trial to get some feedback and establish threshold/race-pace for future workouts.How would you structure the runs? Being the off-season, I don’t want to totally be focusing on doing track-type runs however this presents a challenge in keeping the group together if we go off on, say, a tempo run or a fartlek. I was thinking of doing one strength/speed run and another run with tempo-pace laps varying from ~400m to a mile in length (make the stronger guys do more, etc, in order to finish at the same time). Anything else you got…Like I said, it’s a social/fun tri club looking to provide some fun, yet effective, workouts.
