I’ve got a set of Bontrager race wheels that are 11sp.

You can try to track down pretty much any recent Mavic wheel. My 2006’s were able to accommodate 11spd and are now my trainer wheels.

My bike shop also made a small modification to an 11spd cassette to work on my 10spd CX wheels and it works fine.

But it needs to have a Mavic hub. I see quite a few Mavic hoops with shimano hubs and that will not work.
